
The Wicked's Brew Lead Cook Isn't Satisfied With Just Any Garnish!
The LEAD COOK position at Wicked's Brew is a unique experience, combining farm to table, locally sourced ingredients and a health conscious philosophy while creating delicious, beautifully presented meals for our guests in an open exhibition kitchen. Wicked's Brew Lead Cook oversees the operations of the kitchen which include supervising the kitchen staff to make sure duties are performed appropriately and makes sure the kitchen areas meet health and safety requirements as mandated by law. You will be required to work with others and be an exceptional team player as well as being a self-motivated, detail-orientated self-starter. You will be working on your feet, lifting in excess of 50 pounds, be handling knives and will be using large and small kitchen appliances.
A love of food and a flair for presentation is necessary for this position. You will be responsible for the quality, presentation and preparation of all food. The Lead Cook also supervises all kitchen staff, does the scheduling and closely monitors food costs. There will be some customer interaction as well as some performing, as Wicked's Brew also has an ongoing murder mystery going on.

Summary of Key Responsibilities
Responsibilities and essential job functions include but are not limited to the following:
- Ensures customer satisfaction through the consistent and quick preparation of menu items. Knows all menu items and its ingredients. Makes sure all food is properly prepared to the recipes and standards set by Wicked's Brew. Ensures kitchen staff maintains ticket times of 8-15 minutes. Checks final product before it is delivered to the customer to ensure proper preparation and plating.
- Maintains a safe and clean work environment. Adheres to health codes and hold kitchen staff accountable to do the same. Makes sure the kitchen staff is in proper uniform, works with gloves and appears immaculately clean when working within the kitchen. Keeps all Wicked's Brew kitchen areas impeccably clean, sanitized and organized. Uses proper storage techniques when storing dry goods and refrigerated goods including proper labeling and rotation of all ingredients to prevent food waste.
- Possesses good leadership skills. Directs, coordinates and delegates responsibilities to kitchen staff to ensure goal and objectives of the kitchen are met on a daily basis. Manages break schedules for kitchen staff. Reports staff issues immediately to Manager.
- Tests freshness and quality of products on a daily basis. Reports food quality of facilities issues immediately to Manager. Observes and tests foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils. Weighs, measures, and mixes ingredients according to recipes or personal judgment, using various kitchen utensils and equipment.
- Regulates temperature of ovens, broilers, grills, and roasters.
- Washes, peels, cuts, and seeds fruits and vegetables to prepare them for consumption.
- Bakes, roasts, broils, and steams meats, fish, vegetables, and other foods.
- Carves and trims meats such as beef, veal, ham, pork, and lamb for hot or cold service, or for sandwiches.
- Butchers and dresses animals, fowl, or shellfish, or cuts and bones meat prior to cooking.
- Bakes breads, rolls, cakes, and pastries, including gluten-free and vegan varieties.
- Prepares relishes and hors d'oeuvres.
- Portions, arranges, and garnishes food, and serves food to waiters or patrons.
- Works with the Manager to estimate expected food consumption; then requisitions or purchases supplies to maintain a proper inventory based on recipe, class and event requirements.
- Consults and collaborates with Manager & Workshop Director to plan seasonal menus, monthly themes and hands-on & demonstration cooking classes taking into consideration factors such as costs and special event needs.
- Is familiar with and abides by all Wicked's Brew policies, procedures and systems.
- Keep records and accounts.
- Is punctual and maintains a good attendance record. Is willing to substitute for or assist other cooks during emergencies or rush periods.
- Is professional on all levels while clocked in or on company premises. Leaves issues not related to work, outside of work. Comes to work with a positive attitude and outlook on the day.
- Communicates to Management when there is an issue, whether it is personal or work related.
- Maintains the utmost integrity and honesty while employed at Wicked's Brew.
- Interacts with dining guests; gives out mysterious clues, participates in the culinary workshops and performs short vignettes such as sipping coffee and planning out the day's menu when time allows.
Required Knowledge, Skills and Abilities

- Two year certificate from college or technical school; or 2+ year related experience and/or training; or equivalent combination of education and experience.
- Skilled in using food service equipment including knives, pots, pans and ovens.
- Ability to communicate with management, staff, vendors and customers. Ability to read and interpret documents such as training cards/manuals, order forms, safety rules, operating and maintenance instructions, and procedure manuals. Ability to complete routine reports like daily temperature logs and receiving logs. Ability to speak effectively before groups of customers or employees of organization.
- Ability to deal with problems and resolve them efficiently. Ability to multi-task in a fast-paced and hot environment.
- Possess ingenuity & dedication, and an enviable back-breaking work ethic.
- Available to work flexible hours that may include early mornings, evenings, weekends, nights and/or holidays
- LEAD Responsible Beverage Training and CA ServSafe Food Handlers Card required; ServSafe Food Manager Certification Preferred.
